African Fruit Compote

  • 1 cup fresh pineapple - diced
  • 1 cup fresh cantaloupe - diced
  • 1 cup oranges - peeled and sliced
  • 1/2 cup strawberries - sliced
  • 1/2 cup canned lichee nuts
  • 1/2 cup sugar
  • 1/2 cup water
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons pure vanilla extract
  • 1 pinch salt
In a large bowl, toss all fruit until well combined. Pour lichee nuts over fruit.

In a small sauce pan, combine water, sugar, lemon juice and salt. Bring to a boil for one minute. Remove sauce pan from heat and stir in vanilla extract.

Pour sauce over fruit and lichee nuts.

Cover and refrigerate for one hour.

Serve cold in individual compote dishes.


In Madigascar, an island off the south east coast of Africa, this dish is known as Salady Voankazo.
