Irish Soda Bread

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons sugar
  • 3/4 teaspoon baking soda
  • 5 tablespoons shortening
  • 1/2 cup currants
  • 2 teaspoons caraway seeds

  • 1/3 cup buttermilk
  • 1/3 cup whiskey
  • 1 Tablespoon lemon juice
  • 1 Tablespoon milk
Preheat oven to 375 F.

Prepare a 16 x 12 baking pan with a light coating of cooking spray or butter.

In a large bowl, sift together all dry ingredients.

Add shortening to the flour mixture and cut it in by hand until the texture resemble coarse sand. Add currants and caraway seeds and mix.

Continuing to mix the dough by hand, slowly add in all wet ingredients, except the milk.

Turn the dough out onto a floured flat surface and knead for up to 5 minutes until dough is smooth.

Form into an eight inch round and place on prepared baking sheet. Cut a cross 1/2 inch deep into top center of the dough.

Brush the remaining Tablespoon of across the top of loaf. (You can mix the milk with a teaspoon of powdered sugar to create more of glaze.)

Bake for 40 - 45 minutes. Cool on a wire rack.
