Orange Cornflake Muffins

  • 2 cup all-purpose flour
  • 3/4 cup crushed cornflakes
  • 1 cup orange juice
  • 1/2 cup walnuts - finely chopped
  • 1/2 cup raisins
  • 1/2 cup sugar
  • 1/2 cup butter - softened
  • 2 large eggs
  • 3 teaspoons baking powder
  • 1 Tablespoon grated orange rind
  • 1/2 teaspoon salt
Previous experience using corn flakes as a baking ingredient has taught me to crush the living daylights out of the flakes before using them. I pulse them in a food processor until they're almost the texture of flour. If the pieces are too big, you can get unpleasant chewy bites in the muffin. With that said, I enjoyed these muffins quite a bit. They had a nice orange flavor and the texture of the muffins was hearty but not heavy. These are definitely best when served warm with a smear of butter. (This recipe was submitted in 2005. It was tested and photographed in March 2016.)

How to Make Orange Cornflake Muffins

Preheat oven to 350 degrees.

Prepare muffin tin(s) with cooking spray, butter or paper lining to make 12 muffins.

In a medium bowl, sift together flour, baking powder and salt.

In a separate bowl, beat sugar and butter together until light and fluffy. Add eggs and orange rind and continue to beat for a minute. Stir in orange juice.

Add the flour mixture - stir until just combined. Add cornflakes, raisins and nuts - also stirring until just combined and evenly spread throughout batter.

Fill prepared muffin tin cups to about 3/4 full.

Bake for about 25 minutes.

Optional Cornflake Streusel Topping

- 1 cup corn flakes
- 1/4 cup softened butter
- 4 Tablespoons brown sugar

Combine all ingredients in a medium bowl and mix with a fork until well combined. Sprinkle over muffins before baking.

Cooking Notes From Mr Breakfast

My exact cooking times were 24 minutes for regular-sized muffins and 15 minutes for mini muffins.

When the juice was added to the butter mixture, I found the the texture clumpy and worrisome. But I continued with the recipe as submitted and everything worked out fine. The final batter with thick but surprisingly light.

Want to thank you for this recipe - was on the back of the corn flakes box years ago, like in the 70s. Made it for my kids and they loved it but in moving I lost the recipe and have been looking for it. Thank you and have a blessed day.
