Vanilla Pancake Syrup

  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla
Combine the sugar, corn syrup and whipping cream in a saucepan. Cook, stirring constantly, over medium heat until mixed and sugar is dissolved. Simmer for 2-3 minutes until syrup begins to thicken. Remove from heat and stir in vanilla.

Awesome on pancakes and waffles. Serve warm.

Not bad, but awfully sweet. We ran out of maple syrup on Easter Sunday, but had the 1/2 cup cream and other ingredients on hand. We used Nielsen-Massey's Madagascar Vanilla Bourbon Paste. Yummy.
