Watermelon Muffins

Watermelon Muffins

  • 1 and 1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 1/2 cup watermelon juice
  • 1/2 cup watermelon pulp
  • 1/2 cup milk
  • 1/2 cup raisins
  • 2 eggs
  • 6 Tablespoons butter - softened
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • 1 pinch salt
Preheat oven to 350 degrees.

Prepare 20 muffin cups with papers or a light coating of cooking spray.

In a large bowl, sift together the flour, baking powder, baking soda, salt and cinnamon.

In a seperate bowl, cream butter and sugar; add eggs. Whip in the milk, juice, pulp and raisins.

Add wet mixture to dry ingredients and bake approximately 25 minutes.


You have to try these. Something about cooking with melon seems weird to most people. These muffins will change that.

I added a defrosted mashed banana which increased the moisture content so I had to add more flour and it turned out AWESOME!!! Fabulous recipe.

I couldn't really taste the watermelon. It was kind of plain. Needs more watermelon or watermelon extract or something.

The muffins are indeed excellent, however I felt that more watermelon should be added to enhance the unique flavor of the muffins. Also, the muffins are small - don't be afraid to reduce the yield from twenty small to perhaps twelve "normal" sized muffins.

Awesome recipe! Perfect for adventurous people who like trying different things. The muffins are pretty small, I cut down the recipe and found that it would have been better to keep it as is! I cut out the raisins too in favor of chopped watermelon, it made these incredible muffins all the more flavorful and watermelon-y. I definitely reccomend this recipe to anyone with a sense of adventure!
