Three-Cheese Quiche

  • 6 large eggs
  • 3/4 cup grated Swiss cheese
  • 3/4 cup grated cheddar cheese
  • 1/2 cup ricotta cheese
  • 1 cup half and half cream
  • 2 teaspoons finely chopped onion
  • 2 teaspoons finely chopped fresh parsley
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 9-inch store-bought unbaked pie shell
Preheat oven to 375 degrees.

Place all the cheeses in the pie shell and gently mix the cheeses together.

In a medium bowl, place ALL remianing ingredients and mix until smooth (use a blender if you like).

Pour the new mixture in the pie shell on top of the cheeses.

Bake for 20 minutes. Lower the oven temperature to 350 and continue baking for 35 to 40 more minutes, or until a knife inserted in center comes out clean.

Remove from oven. Allow to cool 5 to 10 minutes before slicing. Serve warm.


This quiche features Swiss, Cheddar and ricotta cheese. Good for dinner too.

Turned out good minus the ricotta cheese. Replaced it with the same amount of cottage cheese. Also a recommendation - pre-bake the crust by itself for 10 minutes before putting ingredients in = flakier, nicely-browned crust.
