Eggs Benedict Bites
(4 servings) Printable Version
- 6 peeled hard-boiled eggs (slice each one 4 times long-ways)
- 3 egg yolks
- 8 slices white bread (French bread worked great for me)
- 6 slices cooked ham 1/8 inch thick (you can buy this at the grocery; cut each slice into 3 strips)
- 1/2 cup butter - melted
- 2 Tablespoons lemon juice
- 1/4 teaspoon salt
- pinch of pepper
In a blender of food processor, pulse egg yolks, lemen juice and salt and pepper for 5 to 10 secondes. Lower mixing speed and pour in melted butter. Set aside to let thicken.
TO MAKE BITES:
Preheat oven to 375 degrees.
Toast all pieces of bread in a toaster. Cut each piece of toast into 4 even squares.
Place toast pieces on a baking sheet. Top each piece of toast with a folded strip of ham. Then, top each bite with a piece of hard-boilded egg. Cover each bite generously with Hollandaise sauce.
Place baking sheet on top rack in oven. Cook for 10 minutes.
Serve warm.
A fun take on an old favorite. Includes easy instructions for a Hollanddaise sauce.
