Eggs Benedict Bites

(4 servings)

  • 6 peeled hard-boiled eggs (slice each one 4 times long-ways)
  • 3 egg yolks
  • 8 slices white bread (French bread worked great for me)
  • 6 slices cooked ham 1/8 inch thick (you can buy this at the grocery; cut each slice into 3 strips)
  • 1/2 cup butter - melted
  • 2 Tablespoons lemon juice
  • 1/4 teaspoon salt
  • pinch of pepper
TO MAKE HOLLANDAISE SAUSE:

In a blender of food processor, pulse egg yolks, lemen juice and salt and pepper for 5 to 10 secondes. Lower mixing speed and pour in melted butter. Set aside to let thicken.

TO MAKE BITES:

Preheat oven to 375 degrees.

Toast all pieces of bread in a toaster. Cut each piece of toast into 4 even squares.

Place toast pieces on a baking sheet. Top each piece of toast with a folded strip of ham. Then, top each bite with a piece of hard-boilded egg. Cover each bite generously with Hollandaise sauce.

Place baking sheet on top rack in oven. Cook for 10 minutes.

Serve warm.
