Sesame Granola

  • 2 cups rolled oats (quick or old fashioned - uncooked)
  • 2 cups wheat flakes
  • 1 cup sunflower seeds
  • 1 cup raisins
  • 3/4 cup sesame seeds
  • 1/2 cup honey
  • 1/2 cup walnuts - chopped
  • 1/2 cup coconut - flaked
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Preheat oven to 350 degrees F.

Lightly pre-grease a 13 by 19 inch baking pan.

In a large bowl, combine all dry ingredients. Mix well, but gently. It's better if the cereal flakes don't get crumbled.

In a very large sauce pan, add the honey, vegetable oil and vanilla. Heat on range at medium heat, stirring often, for about 5 minutes (don't let it boil).

Remove the sauce pan from heat and mix dry ingredients into the pan. Stir until everything is coated well.

Spread mixture in the waiting baking pan. Bake for 15-20 minutes until granola becomes golden brown.

Allow to cool before removing from pan.

This stores well for weeks in an air-tight container.

Very good - but a couple of tips: 1) Lightly toast the sesame and sunflower seeds first (in a pan just until they smell good but before they brown); and 2) Let the granola bake 10 minutes and then add the cereal flakes (they taste a little overcooked otherwise).
