  • 3 and 1/2 cups graham flour
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups buttermilk
  • 2 teaspoon vanilla extract
  • 1 teaspoon salt
PART 1

Preheat oven to 350 degrees.

Lightly grease 12 X 16 inch flat baking pan - using Crisco or other vegetable oil.

In a large bowl, combine flour, brown sugar, salt, baking soda, and cinnamon -- mixing well.

Add the buttermilk and vanilla and stir well.

Pour into baking pan and spread evenly with a spatula.

Bake for 20-25 minutes or until the batter is firm and the color is medium-brown.

With a spatula, completely loosen the hot pattie from the pan. Allow to cool for several hours or overnight.

PART 2

Preheat oven to 275 degrees F. Break pattie into chunks and pulse in a food processor until coarse crumbs are formed. Divide crumbs between
two 12x 16 inch pans.

Bake for 30 minutes, stirring every 10 minutes. Let cool, then store in an airtight container.


Serve as a cold cereal, with milk and a bit of brown sugar, if desired.

I divided in half and followed the recipe exactly for one half and thought it was okay - not super tasty. On the second half I boiled a little concoction of honey, brown sugar, vanilla, oil, water, and a pinch of salt. Then poured this over the "nuts", mixed it well, and baked the second time. This ended up being VERY good! Okay, so not as healthy but oh well.
