Carrot French Toast

Carrot French Toast
(2 servings)    Printable Version

  • 4 slices of bread - wheat or white
  • 1/2 cup grated carrot (about 2 medium carrots)
  • 2 egg whites
  • 1 Tablespoon skim milk
  • 1 Tablespoon finely chopped walnut pieces
  • 2 green onions - finely chopped (optional but reccommended)
  • butter or margarine for frying
In a large mixing bowl, stir together all ingredients except for bread and butter.

Heat a skillet or fry pan to medium-high and melt butter or margarine (about a Tablespoon) for frying.

Dip slices of bread into the carrot mixture. Cook until browned on both sides. Add more butter or margarine if cooking multiple batches.

Serve warm with a pat of butter. I like maple syrup too. My husband does not.

At first was hesitant about adding the onions, but their presense made for an interesting taste experience which got better with each bite. Maple syrup was good for me.
