Atomic Eggs

(4 servings)    Printable Version
  • 2 large eggs (per person)
  • 1 24-ounce can tomato puree
  • garlic
  • basil
  • Tony's Cachare seasoning
  • black pepper and salt - taste
Saute garlic till brown add basil.

Add can of tomato sauce and simmer.

Once heated, make indentations in the sauce for your eggs.

Break eggs into holes, cover and cook until eggs are done. Season and serve.

Note From Mr Breakfast:

I'd put out the word that I didn't know what Tony's Cachare was and you great breakfast lovers responded like crazy.

I've always known this as 'eggs in purgatory'. Directions here are a little spotty. We use 1 clove of garlic (minced) and 2 tablespoons of basil (finely chopped). We also add grated Parmesan on top. It's very tasty.
