Latkes (Potato Pancakes)

  • 2 large baking potatoes
  • 1 Tablespoon grated onion
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1 cup vegetable oil - for frying
  • plain low fat yogurt
  • unsweetened applesauce
Peel and grate the potatoes onto paper towels. Squeeze out the moisture. Combine the potatoes and the remaining ingredients, except the yogurt and applesauce. Beat well.

Heat the oil in a skillet. Drop the batter into the oil by spoonfuls. Fry until crisp and brown on both sides. Remove from the skillet and drain on paper towels. Serve warm with plain yogurt and unsweetened applesauce.


My version of traditional Latkes. I like them served with yogurt and apple sauce on top, but you could also use maple syrup as a topping.
