Egg & Cheese Burrito

- 10 large eggs
- 10 large Flour tortillas
- 1/2 cup flour
- your favorite salsa - to taste
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 pint cottage cheese
- 4 cups shredded Monterey Jack cheese (1 pound)
- 1/2 cup melted butter
- 8 ounce green chiles
Pour into well greased 9x13 inch baking dish. Bake for 35 minutes until center is firm.
Cool for 5 minutes, then cut into squares. Heat tortillas. Place a square of filling down the center of each tortilla.
Spoon salsa over mixture and fold like a burrito.
You can make these ahead of time and keep in freezer to serve later. They are quick to warm up in the microwave, about 1 minute each.
