Egg & Cheese Burrito

  • 10 large eggs
  • 10 large Flour tortillas
  • 1/2 cup flour
  • your favorite salsa - to taste
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 pint cottage cheese
  • 4 cups shredded Monterey Jack cheese (1 pound)
  • 1/2 cup melted butter
  • 8 ounce green chiles
Preheat oven to 350 degrees. Beat eggs. Add flour, baking powder, salt, both cheeses, and melted butter, blend until smooth. Stir in chilies.

Pour into well greased 9x13 inch baking dish. Bake for 35 minutes until center is firm.

Cool for 5 minutes, then cut into squares. Heat tortillas. Place a square of filling down the center of each tortilla.

Spoon salsa over mixture and fold like a burrito.


You can make these ahead of time and keep in freezer to serve later. They are quick to warm up in the microwave, about 1 minute each.
