Big Breakfast Bake
(6 servings) Printable Version
- 1/2 pound frozen hash browns
- 1 pound breakfast sausage (cooked and drained) or 1 cup chopped ham
- 1 small chopped red bell pepper - optional
- 1 cup shredded Cheddar cheese
- 6 large eggs
- 1 and 3/4 cup milk
- 3/4 teaspoon dry mustard
- 1/2 teaspoon salt
- 1 dash of pepper
Sprinkle with Cheddar cheese. Stir together the remaining ingredients. Pour this mixture over everything.
Refrigerate overnight. Bake at 350 degrees F for 30 minutes.
Let stand for 30 minutes before cutting into squares and serve.
A hearty breakfast casserole with eggs, hash browns, sausage and Cheddar cheese. Prepare it at night and bake it in the morning.

Cook the hash browns by themselves for about 10 minutes before adding the other stuff. It doesn't exactly make a crust, but the potatoes are cooked better and the result is better.

Great!!! I've made this several times for guest and even made it when I've been a guest. Yes cut back on the milk, after a few times you'll have the mix you prefer. Instead of milk I like to use egg substitute and decrease a couple eggs. Definitely add onions and pepers, hot if you prefer spicy. Be experimental with ham, bacon or even wild game such as venison sausage. You just can't go wrong with this bake!! Enjoy!!

Have been making this for years for company breakfast -- It is excellent -- cut the milk back to 3/4 cup or it is too runny -- also I use about 1/2 cup of chopped onion and 1/2 cup chopped green pepper (cooked with sausage) -- Momnet
