Cheesy Country Spam Puff

  • 6 slices of white bread - torn into small pieces
  • 1/4 cup milk
  • 3 large eggs
  • 1 Tablespoon spicy mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 12-ounce can Spam luncheon meat - cubed
  • 2 cups (8 ounces) shredded sharp Cheddar cheese - divided
  • 1/2 cup onion - chopped
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese
Preheat oven to 375 degrees.

In large bowl combine bread, milk, eggs, mustard, garlic powder and paprika. Beat at medium speed of electric mixer 1 minute or until smooth.

Stir in Spam, 1 cup of the Cheddar cheese and onion. Pour into a 12 x 8-inch baking dish.

Bake 25 minutes.

Top with remaining 1 cup Cheddar cheese and Montery Jack cheese. Bake 5 minutes longer or until cheese is melted.

Let stand 10 minutes before serving.


Looks good, tastes good, easy to make! Perfect for potluck! And who doesn't like to have Spam every once in a while?

Yeah Spam! It was super cheesy and just a generally good breakfast casserole. I'm a big fan of things with lots of cheese, but this may have been just a little too much cheese. I'd make that 1 cup and a half next time. But I did love it, so thanks Jessica!
