  • 9 large eggs
  • 1/2 cup milk
  • 1 pinch salt
  • 1 8-ounce package grated Cheddar cheese
  • 1 16-ounce can diced tomatoes
  • 1 small can chopped jalapeno peppers - drained
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
In a medium saucepan, combine the tomatoes, peppers and seasonings. Simmer for 30 minutes or until thick.

Beat the eggs with the milk and salt. Pour into a greased 9 x 13 baking dish. Bake at 325 degrees for 20 minutes or until firm. Sprinkle with cheese and bake for 5 more minutes.

Serve the warm salsa sauce over the egg casserole. Garnish with black olives and avocados, if desired.
