Sausage & Stewed Tomato Breakfast Bake

  • 2 packages Farmer John link sausages (cooked)
  • 1 medium cooked onion
  • 1 8-ounce can of stewed tomatoes
  • 5 large eggs - slightly beaten
  • 2 cups milk
  • 1 and 1/2 cups grated sharp Cheddar cheese (or your favorite)
  • 1 sliced loaf of french bread (a couple days old is best)
  • butter - as needed
  • salt and pepper - to taste
Butter a large casserole dish. Butter each slice of bread. In a large bowl, beat the eggs with the milk. and salt and pepper.

Layer bread slices in the bottom of the casserole dish, followed by a layer of cooked sausage links. Top that with 1/3 of the cheese and half of the onions and tomatoes.

Do one more layer of bread, followed by 1 more layer each of sausage, cheese and onions and tomato.

That last layer is made of the remaining bread. Pour the egg mixture over the layers. Sprinkle remaining cheese on top.

Let stand 1 hour or do this the night before storing in the fridge.

Bake about 1 hour at 325 degrees until top is well-browned. Line bottom rack with foil to catch any bubble overs!

Note From Mr Breakfast: The recipe submitter did not specify how the onion was to be cooked. Based on similar recipes I've made, I'd suggest cutting the onion in thin slices or dicing it. Then fry in 1 Tablespoon olive oil over medium heat - stirring occasionally - until the onion pieces are translucent and just starting to brown. Drain on stacked paper towels to remove excess oil.


A morning casserole made up of sausage links, eggs, tomatoes, onions, bread and the cheese of your choice.
