Sunday Morning Brunch

  • 8 slices whole wheat bread - diced
  • 1 pound sausage - cooked and drained
  • 2 cups Cheddar cheese
  • 1 dozen large eggs
  • 1 teaspoon salt
  • 1 cup soy milk
  • 1 Tablespoon mustard
  • 1 Tablespoon curry
  • 1 can cream of chicken soup
Layer bread, sausage and cheese. Beat the eggs. Add the salt, mustard, curry and soup. Mix well.

Pour over top of bread, sausage and cheese layer. Leave in refrigerator overnight.

Bake in a 350 degree oven for 45 minutes.

A very easy brunch casserole with cheese, sausage and a lot of flavor. Secret ingredient: cream of chicken soup. Make it the night before and just cook when ready.
