Strawberry Topping / Syrup

  • 1 pound fresh strawberries
  • 3/4 cup sugar
  • 3 Tablespoons fresh orange juice
  • 1/2 teaspoon finely grated orange zest
Hull and dice the strawberries. This should yield about 3 cups.

Place all ingredients in a medium saucepan set to high heat. Gently mash-down the strawberries with the back of a spoon to release some of the juices. Bring this mixture to a boil. As soon as a boil is reached, reduce heat to low. Simmer for about 15 minutes (stirring occasionally) until the strawberries are soft and the surrounding syrup is thickened to your liking. Remove from heat.

Allow sauce to cool to room temperature before serving.


A beautiful topping for pancakes, waffles or French toast. For an even thicker sauce, add 1 teaspoon of cornstarch (dissolved in 1 teaspoon of water) to the ingredients.
