Sausage and Caramelized Onion Bread Pudding

- 1 and 1/3 cups low fat milk
- 1/4 teaspoon dry mustard
- 1/8 teaspoon salt
- 2 large eggs
- 1 large egg white
- 8 slices of day-old French bread (cut into 1 inch cubes)
- cooking spray
- 2 cups yellow onion - chopped
- 1/4 cup apple juice
- 4 ounces turkey breakfast sausage
- 3/4 cup shredded sharp cheddar cheese - divided
Combine first 5 ingredients (through eggs) and beat well with a whisk. Add bread and toss gently to coat. Let bread mixture stand for 15-20 minutes while you prepare the rest of the ingredients.
Heat a large non-stick skillet over medium heat. Coat pan with cooking spray and add onion. Cook for 10 minutes, stirring occasionally. Add juice and cook 5 additional minutes. Crumble sausage into the pan and cook until brown (5 minutes). Remove from heat. Add sausage/onion mixture to bread mixture with 1/2 the cheese and stir to combine.
Spray a 8 inch square baking dish with cooking spray, spoon in bread and sausage mixture and top with remaining cheese. Bake at 350 degrees F for 40 minutes or until set and cheese is browned. Remove from oven and let stand 10 minutes before serving.
A breakfast casserole with a lot of flavor. 420 calories per serving, 14.6 g fat (7 g sat).
