Farmhouse Eggs

  • 1 and 1/2 cup fresh white breadcrumbs
  • 3 Tablespoons fresh chives - chopped
  • 3 ounces sharp Cheddar cheese
  • 4 large eggs
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 cup half and half
  • additional chopped chives for garnish
Preheat oven to 350 degrees then butter a glass pie dish.

Sprinkle half of the breadcrumbs in the prepared pie dish.

Sprinkle in half of the chopped chives and half of the grated cheese.

Carefully break eggs into the pie dish - spacing them evenly.

Top with remaining breadcrumbs, chives and grated cheese.

Season with cayenne and salt then pour half-and-half over the entire mixture.

Bake for 20 minutes.

Garnish with chopped chives and serve immediately.


Baked eggs over a bed of breadcrumbs, chives and cheese and blanketed with even more good stuff. It's a classic down-home, ranch-style breakfast.

We had the Farmhouse Eggs this morning. Since we like our eggs well done, we had to let this casserole cook much longer than 20 min. I would probably break the yolks next time and pre-heat the oven to 375 deg. with a piece of foil as a loose cover. Interesting flavor.
