Blueberry Smoothie

(2 servings)    Printable Version
  • 1 pint fresh blueberries or 2 cups (10 oz.) frozen blueberries - slightly thawed
  • 1 cup pineapple or orange juice
  • 1 container (8 oz.) low-fat vanilla yogurt
  • 2 teaspoon sugar
In the container of an electric blender, combine blueberries, juice, yogurt and sugar. Blend until smooth, about 1 minute. Serve immediately in tall glasses. Garnish with blueberry skewers spiraled with thin strips of orange peel, if desired.

A great recipe from the North American Blueberry Council. You can make it in minutes for a delicious wake-me-up and start your say with a healthy dose of antioxidants and Vitamin C.

This is delicious even if you skip the 2 teaspoons of sugar. You don't really need it. Thanks for sharing this one!

The only way I can get my 1.5 yr old to eat fruits and veggies in the form of smoothies. With this blueberry smoothie I also add flaxseed and a couple tablespoons of carrot puree. He's none the wiser and I feel good he's getting something that's good and nutritious.
