  • 2 or 3 large eggs
  • 1 handful baby spinach
  • 1/2 to 1 cup brown rice
Cook some brown rice. I keep a container of cooked brown rice in the refrigerator, so all I have to do is heat it up.

Fill a pan of water up for poaching the eggs and put it on heat to start boiling.

Gently wilt a lot of spinach leaves in a pan lightly oiled with olive oil. They will turn dark green and shrink a lot in volume, and for that reason you can really pack in a lot of leaves!

Remove the spinach pan from heat when they're wilted, and poach some eggs.

Get a plate. Cover the bottom with the rice. Then add a layer of spinach. Put your poached eggs on the top.

Add whatever other stuff you want to add.

Tastes great, is way healthy! Sort of reminiscence of the Food Pyramid itself... grain at the bottom, then up to vegetables, fruit, and protein!

This dish is called the Power Tower cause that's what it is: a healthy way to start a successful day. You can customize the basic recipe just by adding little bells and whistles like blueberries, which have tons of benefits for the body. I recommend eating this with strawberries, blueberries, almonds or other so-called super foods.



Poached eggs over spinach and rice. If eaten with a side of fresh fruit you get a portion of most foods in the Food Pyramid.
