Banana Nut Breakfast Bars

  • 2 and 2/3 cups oats
  • 2/3 cup walnuts or pecans - chopped
  • 1/2 cup dried fruit (cranberries/raisins etc)
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/3 cup peanut butter
  • 2 medium bananas - mashed
  • 1 large egg - beaten
  • 1/4 cup canola oil
  • 2 Tablespoons honey
  • 2 Tablespoons pure maple syrup
I wasn't expecting much from this recipe. I made it because I was looking for a 30 minute activity to do with my 2 and 1/2 year old daughter. Together, we mixed up all of the ingredients and spread out the mixture in the baking pan. And then we watched her favorite show Peppa Pig while they baked. Much to my surprise, these bars were FANTASTIC. My toddler asked for them several times a day, every day until they were gone. I think much of the success was due to the dried fruit we decided to use: dried pineapple, dates and blueberries. Overall, this was incredibly EASY and I was very happy with the results. (This recipe was submitted in 2008. It was tested and photographed in September 2016.)

How To Make Banana Nut Breakfast Bars

Mix together the oats, nuts, dried fruit, salt and cinnamon. Add peanut butter, mashed bananas, egg, oil, maple syrup and honey and mix well until blended and mixture is sticky. Add a small amount of water if mixture isn't moist enough.

Press dough into a greased cooking sheet or cake pan. Bake for 15 minutes in a 350 degree oven. While warm, cut the sheet into individual bars.

Be sure to refrigerate if keeping for more than a day or two as there are no preservatives in this recipe.

They aren't very sweet - so you can add more honey or a touch of brown sugar if you like your breakfast bars more sweet.
