Hearty Attack Sandwich

(1 serving)    Printable Version
  • 2 slices Texas toast
  • 1 egg
  • 2-3 strips thick bacon
  • smoked ham or roast beef
  • cheddar cheese
  • mayonnaise
Fry bacon strips until crispy, remove. Fry a few chunks of smoked ham or a few slices of roast beef in the bacon grease until each side is slightly seared, remove. Fry egg in bacon grease. While egg is cooking, toast bread to desired doneness.

Coat slices of bread with mayonnaise, then add one thick slice of cheddar cheese, bacon strips, ham or roast beef, and egg.

My boyfriend loves these hearty breakfast sandwiches in the morning when he is in a hurry and also as a midnight snack. I call them a heart attack on a slice of bread.
