Potato Cheddar Frittata

  • 1 Tablespoon real butter
  • 1 cup frozen diced potatoes with onions and peppers
  • 8 eggs - beaten* 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1/2 cup shredded carrot
  • 4 ounces (1 cup) Cheddar Cheese- shredded
  • 1/4 cup imitation bacon bits
  • Chopped fresh chives - if desired
Melt butter in 10-inch skillet until sizzling; add potatoes. Cook over medium heat for 3 minutes, stirring often, until potatoes are thawed and tender. Reduce heat to medium-low.

Combine eggs, salt, dry mustard, pepper, carrot and 1/2 cup cheese in medium bowl. Pour over potatoes. Cover; cook for 12 to 15 minutes or until center is almost set. Sprinkle with remaining cheese and bacon bits. Remove from heat. Cover; let stand until cheese is melted (2 to 3 minutes).

To serve, cut into 4 wedges. Sprinkle with chives, if desired.



*Substitute 2 cups refrigerated real egg white product if desired.

TIP: Imitation bacon bits are smoky and salty tasting just like real bacon, but are made from soy protein and do not contain animal products. Four slices of crisply cooked crumbled bacon can be used if you prefer.
