Do It Your Way Casserole

  • 8 large eggs - beaten
  • 1/4 cup milk
  • 5 turkey sausage links (or any other meat)
  • 1 cup shredded Cheddar cheese
  • 20 potato rounds
  • butter - to grease casserole dish
  • salt and pepper - to taste
Take a 13 x 9-inch casserole dish, butter the bottom and sides and spread the potato rounds over the bottom.

You could also use shredded hash brown potatoes as long as they're thawed. For that matter, you could even use torn pieces of white or wheat bread.

Cook Sausages until browned and no longer pink in the middle. Cut into small pieces.

Or... you could use any other meat you want as long as it's cooked. Crumbled bacon, diced ham, even hamburger... the amount should be about more than 1/2 cup and less than a full cup.

Scatter the meat over the potatoes in the casserole dish.

Beat the eggs with the milk and a dash of both salt and pepper. Pour this mixture over the ingredients in the casserole dish.

Top with the cheese.

I usually use Cheddar, but Pepper Jack, Mozzarella, those Mexican cheese blends... any shredded cheese will work. Just use your favorite.

Bake in a 350 degree oven for 30 to 40 minutes.


I've included exact ingredients, but you can modify this in a dozen ways. I make various suggestions for changes throughout the recipe.

He mentions eggs - you beat them and pour them over all of the assembled ingredients. I would suggest that if you use hash browns, you line the baking pan with them and cook those on their own for 15 minutes because they take longer to cook than the eggs, etc.

What about the eggs?? They are mentioned in the ingredients but not in the instructions.
