Quick Turkey Sausage & Rice Breakfast Skillet

  • 2 bags of instant brown rice (or 3 cups cooked rice)
  • 1 pound bulk turkey sausage
  • 1 (10 ounce) can of tomatoes with green chiles (undrained)
  • 1 Tablespoon chili powder
  • 1 1/2 cups shredded Monterey jack cheese
Prepare instant rice according to directions. Set aside.

Crumble sausage into a large skillet and cook until browned. Drain fat and add onion, cooking until tender. Stir in tomatoes, chili powder and rice. Simmer 2 minutes until heated through.

Sprinkle with cheese and serve.

Garnish with chopped cilantro and sour cream if desired!
