Easy Turkey Hash

  • 1 medium onion - chopped
  • 1 16-ounce bag of frozen diced potatoes or hash browns
  • 2 cup cooked turkey - shredded or chopped
  • 2 Tablespoons butter
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 to 1 cup turkey gravy - optional
In a large skillet over medium-high heat, melt the butter and saute the onions until soft and translucent - about 2 minutes. Add the potatoes and cook until they begin to brown - about 5 to 7 minutes.

Add the turkey and all seasonings. Stir to combine. Reduce heat to medium and continue to cook for 2 to 3 minutes until the turkey is heated though.

Serve as a side dish with eggs. Smother in delicious gravy if desired.


This is a wonderful recipe for using up leftover turkey and gravy from holiday meals. If you like, you can also add a half cup of chopped green pepper for a Western flavor.

You can also make this with chicken and it's just as good. We often buy rotisserie chicken at the grocery store and have left overs. This is a great use for that and you really don't need to add the gravy if you don't want to or don't have any.
