Mushroom Onion Egg Bake

  • 1 Tablespoon vegetable or canola oil
  • 4 ounce sliced mushrooms (between 1 and 1/2 and 2 cups)
  • 4 large green onions - chopped
  • 1 cup low-fat cottage cheese
  • 1 cup sour cream
  • 6 large egg
  • 2 Tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • a dash or two of hot sauce (optional)
Prepare a 1-quart baking dish with a generous coating of cooking spray.

In a large skillet over medium heat, saute the mushrooms and onions in the oil until tender. Set aside.

Preheat oven to 350 degrees.

In the food processor or blender, pulse the cottage cheese until smooth. Add the sour cream, eggs, flour, salt, pepper and hot sauce (if desired) and pulse a few more times until well mixed. Stir the vegetables into this mixture and pour entire contents into the prepared baking pan.

Bake for 40 minutes or until a knife inserted into the center comes out clean.

I didn't have time to do shopping yesterday, my husband was waking up, being ready for a morning coffee. I checked what I had in the refrigerator, found 2 eggs, a few mushrooms, half onion, cottage cheese. I googled these out for a recipe, hoping something 'd come up, and it did! I didn't have sour cream, so I made this without it. The preparation only took less than ten min, baking took about 20 min (mine was about 2 servings). My husband liked it. Thanks!
