  • 1 Tablespoon butter
  • 3/4 cup cubed cooked ham or crumbled cooked bacon
  • 1/3 cup onion - chopped
  • 1/4 cup green pepper - chopped
  • 4 large eggs - beaten
  • 1/2 cup shredded Cheddar cheese
  • salt and pepper - to taste
  • 1 Microwave-safe pie-plate (about 9-inch)
When I tested this recipe, I cut all of the ingredients in half and used a 5-inch microwave safe bowl to make a single serving. I loved this frittata. I've always been inclined to turn up my nose at microwave egg recipes - knowing from experience that a stove-top or oven version is usually superior. With this one... if it was served to me at a restaurant, I would assume that it was made in the oven. I would recommend that you cover the dish with plastic wrap and poke the wrap with venting holes before microwaving the eggs. The eggs will puff up and deflate. The plastic wrap keeps in moisture and keeps the eggs in the dish. Also, keep an eye on the dish in the microwave and the cooking times. My butter melted in 20 seconds and my eggs were fully cooked at 1 minute and 15 seconds. I used 2 slices of cooked bacon for my meat which would equate to 4 slices for the full recipe. Overall: Super good! (This recipe was submitted in 2006. It was tested and photographed in February 2014.)

How To Make A Microwave Frittata

This makes 2 hungry guy portions or 4 tea time portions.

Microwave the butter in the pie plate on the defrost setting for about 45 seconds until melted.

Spread the meat, onion and green pepper in the dish and microwave on high for 2 minutes.

Stir in the beaten eggs and seasonings and cook on high for about 2 minutes - until a toothpick (or knife) inserted near the center comes out clean.

Sprinkle evenly with cheese - microwave for 20 seconds more until cheese begins to melt.

Let stand for 3 minutes before cutting into wedges to serve.


A frittata in five minutes with ham (or bacon), cheese, green peppers and onion. Quick and delicious.

It's good, but be careful because it splatters inside the microwave. I cover the cooking dish with two paper towels so not to make a mess.

Could someone tell me if Breakfast Lasanga and Microwave Frittata are able to be cooked and put in a freezer before being required.maccas23@bigpond.net.au
