Microwave Frittata
(2 servings) Printable Version
- 1 Tablespoon butter
- 3/4 cup cubed cooked ham or crumbled cooked bacon
- 1/3 cup onion - chopped
- 1/4 cup green pepper - chopped
- 4 large eggs - beaten
- 1/2 cup shredded Cheddar cheese
- salt and pepper - to taste
- 1 Microwave-safe pie-plate (about 9-inch)
How To Make A Microwave Frittata
This makes 2 hungry guy portions or 4 tea time portions.
Microwave the butter in the pie plate on the defrost setting for about 45 seconds until melted.
Spread the meat, onion and green pepper in the dish and microwave on high for 2 minutes.
Stir in the beaten eggs and seasonings and cook on high for about 2 minutes - until a toothpick (or knife) inserted near the center comes out clean.
Sprinkle evenly with cheese - microwave for 20 seconds more until cheese begins to melt.
Let stand for 3 minutes before cutting into wedges to serve.
A frittata in five minutes with ham (or bacon), cheese, green peppers and onion. Quick and delicious.

It's good, but be careful because it splatters inside the microwave. I cover the cooking dish with two paper towels so not to make a mess.

Could someone tell me if Breakfast Lasanga and Microwave Frittata are able to be cooked and put in a freezer before being required.maccas23@bigpond.net.au
