Egg-static Casserole

(4 servings)    Printable Version
  • 6 large eggs - beaten
  • 2 cups milk
  • 4 slices bread - cubed
  • 1 pound breakfast meat(s) of your choice
  • 2 cups shredded cheese (any variety)
  • 1 cup chopped veggie mixture
Combine all ingredients and bake in a preheated 350 degree oven for 45 minutes.

That's all there is too it!

Cooking Notes:

For the breakfast meats, they have to be cooked. Cooked and crumbled sausage is great. Cooked and crumbled bacon is even better. Leftover ham is a favorite of mine, because it's already cooked and ready to go.

For the cheese, I usually go with Cheddar. Pepper Jack is an interesting choice. If I use that, I'll add a teaspoon or two of chopped hot chili pepper to my veggie mix so the the whole casserole has a Tex-Mex flavor (and top each serving with salsa).

For the veggie mix, my go-to ingredients are usually chopped onions and chopped bell peppers, but you can really do anything you want in any ratio as long as the veggies are chopped or diced.



This is a very flexible recipe. The meat, cheese and vegetable items can be any of your favorites, or can be left out entirely if you have dietary considerations.
