Eggs Monterey

  • 2 6.5-ounce jars of artichoke pieces in water
  • 4 large eggs
  • 1/2 cup milk
  • 4 green onions - minced
  • 1/2 cup prepared pesto
  • 8 ounce Monterey Jack cheese - grated
  • 6 saltine crackers - crushed
  • sour cream - for topping
Pre-heat oven to 350 degrees.

Drain and chop artichokes. Set aside.

In a medium bowl beat eggs to lemon color. Add artichokes, milk, onions, pesto, cheese and crackers to the eggs. Mix ingredients together and pour in an 8x8-inch buttered pan. Bake 35 to 40 minutes.

Cut into squares and garnish with sour cream to serve.

A fairly easy to make morning casserole with Monterey Jack cheese, eggs, artichoke pieces and 4 other ingredients.
