Deirdre's Egg Tacos

  • 4 large eggs
  • 1/3 cup leftover taco meat
  • 2 flour or corn soft tortilla wraps
  • 1/3 cup Montery jack or Colby shredded cheese
  • 1 Tablespoon butter
  • hot sauce - desired hotness
Beat the eggs. Place a large frying pan over medium-high heat and melt the butter.

Pour the eggs in the pan and cook for 30 seconds. Add the taco meat and cheese and stir and scramble until eggs are completely set.

Place the eggs in a line down the middle of each tortilla shell. Add hot sauce if desired. Roll or wrap the tortillas over the eggs.

Eat and enjoy!


If I have tacos for dinner, I can guarantee I'll have egg tacos the next morning. It's the perfect way to use leftover tortillas and taco meat.
