Mushroom Pizza Quiche

  • 1 cup mushrooms - sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/3 cup cream cheese - softened
  • 1/3 cup heavy cream
  • 1/4 cup parmesan cheese
  • 4 large eggs
  • 1 teaspoon basil - finely chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
Preheat oven to 375 degrees.

Prepare a 9-inch baking pan with a generous coating of cooking spray.

In a large bowl, beat the eggs with cream cheese and cream until smooth.

Add parmesan cheese, basil, oregano and garlic powder and mix well. Stir in sliced mushrooms and pour into prepared pan.

Bake for 30 minutes until eggs are set.

Remove from oven. Spoon pizza sauce evenly over quiche. Sprinkle evenly with mozzarella cheese.

Return quiche to oven for about 5 minutes or until cheese is browned and bubbling.

Remove from oven. Let stand at least five minutes. Cut into wedges and serve.
