Savory Breakfast Sausage Tart

  • 1/2 pound turkey breakfast sausage - casings removed
  • 2 large eggs
  • 1 homemade or ready-to-bake pie shell
  • 1 Tablespoon vegetable oil
  • 1/4 cup onion chopped
  • 1 cup half-and-half
  • 10 ounces frozen cut asparagus - thawed and drained
  • 2 roasted red peppers - cut into 1/4-inch strips
  • 1/4 cup Parmesan cheese - grated
  • 1 Tablespoon parsley - minced
  • 1 Tablespoon chives - minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Preheat oven to 375 degrees F. Bake pie shell for 10 minutes according to package directions. Set aside to cool.

Heat oil in medium skillet over medium heat. Add onion and saute until softened, about 3 to 5 minutes.
Add sausage and continue to cook, breaking up sausage until browned and no longer pink, about 5 minutes; transfer sausage mixture to medium bowl.

Beat eggs and half-and-half together in a large bowl. Stir in sausage mixture, asparagus, roasted peppers, cheese, parsley, chives, salt and pepper.

Pour into baked pie shell. Bake until custard is set, about 30-40 minutes. Transfer to wire rack, cool about 10 minutes before serving.
