Cheesy Eggs Benedict

- 12 thick slices cooked ham
- 12 eggs - beaten
- 1/4 cup milk
- dash salt and pepper
- 1/4 cup butter
- 1/4 cup flour 2 cups milk
- additional salt and pepper
- 2 cups shredded Cheddar cheese
- 6 toasted English Muffins (12 halves)
Combine beaten eggs, 1/4 cup milk, and a dash of salt and pepper. Scramble and cook in frying pan or electric skillet; keep warm.
Melt butter in medium saucepan. Stir in flour and cook until smooth, about 1 minute. Add milk and a dash of salt and pepper; cook and stir with wire whisk until thick and smooth. Add cheese and remove from heat. Stir until cheese is melted and blended.
Place one slice of ham on each muffin half. Top with scrambled eggs and cheese sauce.
Easy and cheesy.... with slices of ham, scrambled eggs and Cheddar cheese sauce over English muffins.

This is a very good recipe. A restaurant I used to work for in the 70's had this on their menu. It was a very good seller. If you want to fancy it up, add the spices as stated above to the sauce, then add a slice of ripe tomato and a couple of asparagus spears under the eggs. - Mike

I like it better than regular Eggs Benedict and it's easier to make be cause you don't have to poach the eggs.

We enjoy the Cheesy Eggs Benedict recipe. We have found that by adding a teaspoon of Worcestershire Sauce plus a good dash of garlic powder the flavor is enhanced quite a bit.
