Low-Carb Bacon & Egg Surprise

  • 2 slices lean bacon
  • 2 large eggs
  • 2 mushrooms - sliced
  • 1 tomato - halved
  • green and red pepper (1 medium slice of each)
  • low-fat grated cheese (about 1 Tablespoon)
Partially cook the bacon in the microwave until it is limp.

Spray the inside of a ramekin with cooking spray and lay the bacon inside to create a cup overlapping the side of the ramekin.

Place the half tomato in the bottom and layer with the mushrooms and peppers. Crack the eggs over the top, ensuring not to break the yolks. Cover the whole top with low fat grated cheese and bake in an oven for approximately 20 minutes at about 375 F (180 to 200 degrees C).

When your surprise is cooked, run a knife around the inside of the ramekin and you should be able to pull the surprise out in tack by lifting the bacon that is sticking out at the top.


You can mass create individual portions by using a deep muffin tin. Low-carb friendly recipe.

It's a good recipe - keep in mind bacon has no carbs but the eggs is about 75 calories. White eggs are better about 17 calories for two eggs.

Great idea for breakfast. We changed it up a bit for each family member by removing and adding ingredients (onion, sausage, potatoes, ham). It's really good over sourdough bread with Hollandise sauce. Yum!!
