Southwestern Breakfast Squares

  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup red pepper - chopped
  • 1 4-ounce can of chopped green chilies
  • 2 Tablespoons butter - melted
  • 1 Tablespoon cilantro - finely chopped
  • 1 tablespoon onion - chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • additional butter to grease pan
  • salsa for topping - optional
Prepare a 9-inch baking dish by lightly greasing with butter.

Preheat oven to 350 degrees.

In a large mixing bowl, beat the eggs with the baking powder and salt. Add all remaining ingredients (except for optional salsa) and stir until just mixed.

Pour mixture into baking dish.

Bake for 30 to 35 minutes or until a knife inserted near center comes out clean. Let cook slightly before cutting.

Cut into 6 pieces. Serve with your favorite salsa.


This is very easy to make and it has a great Southwestern kick to it. Good for when company comes by.
