Jalapeno Breakfast Pie

  • 6 large eggs - beaten
  • 2 cups sharp cheddar cheese
  • 4 ounce jar of pickled jalapenos - sliced
I halved this recipe and made a single serving in a 4-inch round pan. I liked the complexity of flavor that was created from only 3 ingredients. I'd suggest that you taste the jalapenos and adjust the amount you use. Mine were extremely hot, so I ended up scattering about 1 Tablespoon over the bottom of the pan. I served my Jalapeno Breakfast Pie with warm corn tortillas and salsa. This was a surprisingly good recipe. I'm sure I'll make it again. (This recipe was submitted in 2004. It was tested and photographed in February 2014.)

How To Make A Jalapeno Breakfast Pie

Preheat oven to 350 degrees.

Spray a 9 x 9 pan with light coating of cooking spray.

Spread jalapenos evenly on bottom of pan. Sprinkle cheese evenly over them. Pour beaten eggs over the cheese.

Bake for 30 minutes until edges are lightly browned and crispy.

Cut into squares and serve warm.
