Jalapeno Breakfast Pie

Jalapeno Breakfast Pie

(4 servings)    Printable Version
  • 6 large eggs - beaten
  • 2 cups sharp cheddar cheese
  • 4 ounce jar of pickled jalapenos - sliced
I halved this recipe and made a single serving in a 4-inch round pan. I liked the complexity of flavor that was created from only 3 ingredients. I'd suggest that you taste the jalapenos and adjust the amount you use. Mine were extremely hot, so I ended up scattering about 1 Tablespoon over the bottom of the pan. I served my Jalapeno Breakfast Pie with warm corn tortillas and salsa. This was a surprisingly good recipe. I'm sure I'll make it again. (This recipe was submitted in 2004. It was tested and photographed in February 2014.)

I first made this two years ago, and since my grandkids and children ask for it each holiday breakfast. Thanks Stephanie for a great recipe! From a family of vegetarians... who love new ideas!

My neighbor actually brought this as an appetizer to my christmas party. It was gone in no time, and everyone was asking for the recipe! Great!
