Banana Crunch French Toast

Banana Crunch French Toast
(4 servings)    Printable Version

  • 4 thick slices King’s Hawaiian Bread - cut in half
  • 3 Eggs
  • 1/4 cup Milk
  • 1/4 tsp. Ground cinnamon
  • 1/2 tsp. Vanilla
  • 2/3 cup Sliced almonds - crushed
  • Cooking oil or clarified butter - as needed
  • 1 cup Maple syrup
  • 1 oz. Dark rum
  • 2 Bananas - diced
  • 1 cup Lightly sweetened whipped cream
  • Confectioner’s sugar to garnish
  • Fresh mint sprigs to garnish
Bring maple syrup and rum to a simmer in a saucepan over medium heat. Turn off heat and add bananas, allowing them to steep in the rum syrup.

In a medium bowl, combine eggs, milk, cinnamon and vanilla. Whisk until well incorporated.

Heat griddle and add a small amount of cooking oil or butter. Dip bread slices in egg batter and crushed almonds. Place on griddle. Cook until golden brown on both slices. Place on warm serving plates and top with rum glazed bananas.

Garnish with whipped and mint. Dust with Confectioner’s sugar and serve.

Makes 4 Servings.
