  • 1 can of Spam
  • 2 cups all-purpose flour - sifted
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 2 teaspoon sugar
  • 2 large eggs - separated
  • 1 and 3/4 cup milk
  • 1/3 cup shortening - melted
This recipe is from a vintage 1947 magazine advertisement for Spam. "Cold or hot... Spam hits the spot!" The ad also suggests (rightly so) that Spam goes great with scrambled eggs and pancakes. For a "Different Breakfast" they recommend serving hot corn bread with butter, sweet apple sauce and Spam for a delicious taste contrast.

How To Make Spam 'N Waffles

Slice the Spam 1/4-inch thick. Fry this juicy tender all-pork meat (verbiage from the ad) to a golden brown.

To make Crisp Waffles...

Combine the flour, salt, baking powder and sugar. Add well-beaten egg yolks to the milk and stir into the dry ingredients. Add the melted shortening and beat until smooth. Fold in stiffly beaten egg whites.

Spoon about 1/2 cup batter in hot waffle iron and bake. Makes six waffles.

Top waffles with butter and maple syrup. Serve with fried Spam on the side as you would bacon, sausage or ham.
