*If you can't find buttermilk simply add 1 tbsp of lemon juice to one cup of milk and let it rest for 5 minutes.
Beat the egg whites for a few minutes. Then add buttermilk (or skim milk), yogurt, salt, and flour. Beat till everything is well blended. Then add the baking powder, and continue beating. Use 1/2c per waffle, and add the diced banana when you pour the batter into the iron.
This won't yield a crispy waffle but the final product is really good and healthy. Each waffle is about 5" in diameter.
