Maple Walnut Waffles

  • 2 cups all-purpose flour
  • 1 and 1/2 cups buttermilk
  • 1/2 cup pure maple syrup
  • 1/2 cup chopped walnuts
  • 1/3 cup vegetable shortening
  • 2 large eggs - beaten
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
These are easy, tasty waffles with a fun, occasional crunch from chopped walnuts. They were especially good paired with breakfast sausage links. After making and tasting the first waffle, I found that I liked the maple flavor so much, I decided to amp it up a little more and added a couple drops of maple extract to the batter. In the future, I might consider replacing the maple syrup with honey and using a full teaspoon of maple extract. That's just because pure maple syrup is quite expensive and I feel like I might get a very similar flavor from cheaper ingredients. But with that said, this recipe as written works really well and should please most waffle lovers. (This recipe was submitted in 2006. It was tested and photographed in May 2015.)

How To Make Maple Walnut Waffles

Preheat waffle iron according to manufacturer's instructions.

In a large bowl, combine the flour, buttermilk, maple syrup, shortening, eggs, baking powder, baking soda and salt. Beat until batter is very light. Fold in walnuts.

Pour batter into the center of the preheated iron. The amount of batter needed per waffle should be detailed in your waffle makers' manufacturer's instructions. (The waffles shown here used 1/2 cup batter per waffle and they were baked for about 2 minutes each).

These are great with a butter and additional maple syrup. A must-try for maple lovers.
