Pineapple Waffles

Pineapple Waffles

  • 1 and 1/2 cups flour
  • 1 8-ounce can of crushed pineapple
  • 3/4 to 1 cup of milk
  • 2 large eggs - separated
  • 3 Tablespoons sugar
  • 2 Tablespoons canola oil
  • 2 Tablespoons butter - melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
This recipe is Mr Breakfast Tested And Approved if... you add 1 teaspoon of vanilla extract and 1/2 teaspoon almond extract to the wet ingredient and keep the milk to 3/4 cup which makes makes crispier waffles than batter with more milk. (This recipe was submitted in 2006. It was was tested in August 2014.)

How To Make Pineapple Waffles

In a large bowl, sift together flour, sugar, baking powder and salt. Add milk, egg yolks and canola oil, melted butter and mix well.

In a small metal or glass mixing bowl, beat egg whites until stiff peaks form.

Mix pineapple pieces into batter. Fold in the beaten egg whites.

Cook waffles according to waffle iron manufacturer's recommendations. Enjoy!


I like mine with a little orange marmalade on top!

I added 7oz fresh pineapple puree instead of the canned fruit. It wound up a little too moist, so I added an extra half cup of flour.
