Cherry Pancake Sauce

  • 2 cups sweet cherries - pitted and halved
  • 1/2 cup orange juice
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon grated orange peel
  • 1/8 teaspoon ground cinnamon
In a medium saucepan, combine the sugar, cornstarch and cinnamon; add orange juice, cherries and orange peel. Bring to a boil over medium-high heat; boil until thickened. Serve over warm pancakes or waffles.

I had cran-apple juice and lemons so I substituted them for the orange juice and orange rind. Delicious!

I found this to be an excellent recipe, however I added a 1/2 a teaspoon of almond essence, as I think almonds and cherries really complement each other.
