Egg And Cheese Tortillas

(2 servings) Printable Version

2 eggs
4 flour tortillas
2 slices of cheese

Spray a microwave safe bowl with pam.

Scramble eggs in bowl, pop into microwave and cook for about 2 minutes, till eggs are done.

Cut the eggs into 4's, place a piece of egg and a half a slice of cheese on each tortilla and put into microwave for 20 seconds.

Roll up and eat.

Serves 2

This is fast, easy and oh so yummy. Make your microwave a Mexican fiesta!
