Ten Minute Omelette

Ten Minute Omelette

  • 4 large eggs - separated
  • 1/4 teaspoon salt
  • 1 Tablespoon flour
  • 1 Tablespoon butter or margarine - softened
  • 1 Tablespoon water
Beat egg whites with salt until stiff, but not dry.

Beat egg yolks with pepper, flour, butter and water until fluffy. Fold yolks into egg whites.

Pour into a well greased skillet. Cover tightly. Reduce heat to low and cook 8 to 10 minutes on top of range until surface of omelette is dry.

Fold in half and serve promptly.


10... 9... 8... Blast off to breakfast! A simple fluffy omelette... amazingly fluffy.

I actually like adding flour. It makes the omelet a little more firm so it doesn't break when you flip if in half. BTW... I started with the skillet at medium heat. There wasn't an instruction about the starting temperature.

I don't really get the flour. Can anyone explain why we'd use that?
