This recipe has become a staple in my household. It's pretty flexible if one doesn't have all the ingredients handy. I like it with some cooked bacon added to the egg just before you pour it into the dish.

Really easy to make and very good. I served with medium bottled salsa (was all I had). Next time will use fresh salsa and kick it up a notch. Thanks for a great recipe.

I made this for breakfast this morning and it was wonderful! So easy and so good. I served it with medium chunky salsa. I think next time I'll add onions and possibly cooked sausage. But I will make this again!!
